Corn fritters
Fried corn fritters are often served with chili, but they can also be a great side dish or appetizer for just about any meal. The dough can be prepared in advance, leaving only the cooking to be done at mealtime.
They’re a great way to use up leftover corn. Try them with our Super Dips Olé olé guacamolé or the Super Dips dip of your choice.
Ingredients:
- 3 cups corn kernels (fresh or canned)
- 1 cup sifted all-purpose flour
- 1 tablespoon of sugar
- 1 teaspoon baking powder
- Salt and pepper
- 2 large eggs lightly beaten
- 3/4 cup 35% cream
- Vegetable oil, for frying
- Sliced shallots, for serving
- SuperDips dip, to serve (we suggest Olé olé guacamolé)
Preparation:
- In a large bowl, combine corn kernels, flour, sugar, baking powder, ½ tbsp salt and ¼ tsp pepper.
- Stir in eggs and cream until batter is well blended.
- Line a plate with paper towel. Coat the bottom of a large sauté pan with vegetable oil and place over medium-high heat.
- Once the oil is hot, pour 2-3 tablespoons of corn batter into the pan, spreading it lightly into a flat, circular shape.
- Cook the fritters for 2-3 minutes, then flip once and cook for another 3 minutes until golden brown and cooked through.
- Transfer the fritters to the paper towel-lined plate. If desired, season them immediately with salt. Repeat the cooking process with the remaining batter, adding more oil to the pan as needed.
- Top the corn fritters with green onions and serve with the SuperDips of your choice.
