Baked Potatoes with Bacon and Cheese
These baked potatoes are the perfect accompaniment to your meals on the BBQ. Whether you make them with our Cheesy Bacon, Garlic & Maple or OMG Maple Bacon mix, it’s a sure hit!

Ingredients:
- 4 potatoes (Russet or Idaho are ideal)
- 2 green onions or fresh chives, finely chopped (or 1/2 sachet of Chive or Supreme Onion SuperDips)
- 1/4 cup softened butter
- 1/2 cup sour cream (or 1/4 cup sour cream and 1/4 cup mayonnaise)
- 1 bag of Cheesy Bacon, Garlic and Maple Super Dips or OMG Bacon
- Salt and pepper
- Bacon bits (optional)
- Grated cheddar cheese (optional)
Preparation:
- Cooking the potatoes:
BBQ: Place foil-wrapped potatoes on BBQ on high and cook 30-40 minutes.
In the oven: Preheat the oven to 400 F and place the potatoes directly on the oven rack. Cook for 1 hour, turning occasionally.
In the microwave: Place them in a microwave-safe dish and cover with plastic wrap (raise one corner). Cook for a maximum of about 10 minutes. - Cut a thin slice off the top of each potato. Remove the potato flesh with a spoon. Leave 1/2 inch thick all the way around.
- Put the potato flesh in a bowl and pound with sour cream, butter, chives or green onion (if desired, grated cheese can be added at this stage). Add the contents of the SuperDips sachet. Salt and pepper.
- Put this mashed potatoes in the hollowed out potatoes. If desired, sprinkle with bacon bits and shredded cheese. (Note: These steps can be made in advance. Simply reheat the potatoes to 375 F for 20 minutes before moving on to step 5).
- Place the potatoes on a baking sheet and cook under the grill for about 3 minutes.
