Apple Salad with Roasted Walnuts and Maple
Vinaigrette :
- 1/4 cup mayonnaise
- 3 tbsp. olive oil
- 2 tbsp. cider vinegar or white wine
- 2 tbsp. Maple & Garlic Super Dips
- 1 tsp. Dijon mustard
Salad :
- About 6 cups mesclun or baby spinach
- 1 cup toasted walnuts
- 2 apples cut into pieces
- bacon bits
- Crumbs of feta or other cheese
Preparation:
- In a bowl, combine the vinaigrette ingredients with a whisk and set aside.
- In a large bowl, combine the salad ingredients.
- Before serving, pour in the vinaigrette and toss to coat.
