Apple Salad with Roasted Walnuts and Maple

Vinaigrette :
  • 1/4 cup mayonnaise
  • 3 tbsp. olive oil
  • 2 tbsp. cider vinegar or white wine
  • 2 tbsp. Maple & Garlic Super Dips
  • 1 tsp. Dijon mustard
Salad :
  • About 6 cups mesclun or baby spinach
  • 1 cup toasted walnuts
  • 2 apples cut into pieces
  • bacon bits
  • Crumbs of feta or other cheese
Preparation:
  1. In a bowl, combine the vinaigrette ingredients with a whisk and set aside.
  2. In a large bowl, combine the salad ingredients.
  3. Before serving, pour in the vinaigrette and toss to coat.
